Black Calypso Beans
Also known as Yin/Yang. This bean is light and has a distinct potato flavor. Really! The potato flavor makes it ideal for seasoning with bacon (or pancetta) and sage. When cooked, the beans will dull in color, changing from black and white to tan and ecru. Suggestions: Cook with mirepoix and pancetta, and serve with a dusting of dry cheese and a splash of olive oil. Also good in soups and chowders.
