I love what you guys are doing, bringing these heirloom varietals of seeds is so tremendous for our food system, and was super excited when I ordered the chilies, not alot of places have the variety you have, except when I processed the mulato, ancho, and pasilla they where really crumbly, too dry. A dry chile when is it at its peak time still has some flexibility while the product I got was crumbly and unmanageable for a complex recipe when trying to process them, but the pasilla de Oaxaca where in amazing shape, as well as the guajillo, de arbol, chipotle seco, morita, also loved the detailed shipping provided by you guys, thank you for everything.
