Common Beans
Please do not order more than 3 packets of any one variety, and no more than 40 packets total.
Common beans (Phaseolus vulgaris) are a diverse and important crop to Native American farmers throughout the Southwest. They are eaten young as green beans or dried and shelled. Plants can be bush, semi-pole, or pole. Native to the New World, beans are a traditional protein complement to corn, rich in minerals, with a variety of tastes and colors. Members of the legume family, beans fix nitrogen from the air if certain bacteria are present in the soil to infect the roots. Beans also contain soluble fiber helpful in controlling cholesterol and diabetes.
Beans defined as early maturing may range from 55 to 70 days to greenbean, and 90 to 120 days to dry mature beans. Beans defined as late maturing may range from 75 to 100 days to greenbean, and 130 to 150 days to dry mature beans. These numbers are based on data from Patagonia, AZ; your results may differ.
