  • Atole style blue corn meal is prepared by roasting the corn before it is ground. It can be used in most recipes calling for regular corn meal. Atole is a traditional Native American breakfast drink made by cooking roasted corn meal with water or milk, adding sugar or other spices to taste. Cooks from the Pueblo Tribes tend to prefer using Atole style for all their corn meal recipes because of the enhanced flavor of the roasted meal.

Love the Tamaya Blue Corn Atole

I use it to make a version of the hot atole beverage, mixing it with cocoa powder, cinnamon, a little brown sugar, milk and vanilla extract. The blue corn atole cooks up so smooth and creamy and has a warming, earthy flavor. Perfect on those cold winter mornings.

Great pancakes!

Had blue corn pancakes for breakfast today. One half-cup of atole with 1 1/2 c of bisquick plus a couple tbs of sugar. Adds a nice color and subtle crunch to the cakes.
