Posole, Organic Blue Corn

Treated with lime to remove the hulls. Empty contents of package into a non-reactive container and cover with water; soak overnight. Boil posole in salted water for approximately 2 hours and then add meat, chile pods, oregano, garlic. Cover and simmer for another hour or until posole is tender, stirring occasionally. Delicious with beans or on its own. Produces a beautiful broth.

Excellent texture and flavor

I had never cooked hominy from dry kernels before. We really enjoyed this much more than canned which I think is more texture than flavor. I soaked the kernels for a day then Instant Pot for 45 minutes before I added it to soup or chili. Next batch I’m going to do more and freeze half to check quality of that method

So hearty and delicious. Takes a little longer to cook to full tenderness than other dry beans or white corn posole, fyi.

And it was fun. I’ve only had canned hominy before, so I’ve never seen the corn actually pop a bit while cooking. Of course the flavor was amazing too. Blue corn was a new experience for me as well. Loved this posole.
