How to cook tepary beans: Soak overnight. Drain water and replace with fresh, cold water for cooking. Place on stove and bring to a boil in a pot with a lid. Once boiling, reduce to a simmer, tilting lid slightly to allow steam to escape, and leave to cook for up to 90 minutes, or until tender.

Excellent! I Love these Beans

I used them to make a Sean Sherman recipe: “Three Sisters Bowl”. They have a delightful, subtle and earthy flavor. Highly recommend.

Wonderful

I'd read about Tepary beans in a Gary Paul Nabhan book. Then I read an article that said they are being studied by agronomists for breeding hybrids to help feed people in hotter, dryer conditions that we might expect from climate change. Wow! On top of all this Tepary beans taste great and I like the way they keep a slightly chewy texture instead of going full-out soft. I used them in the tamale pie recipe from your website for part of our vegetarian Harvest Feast here. It was a hit with everyone. And I made my favorite Italian New Year's Eve soup recipe with more of them a few weeks ago. I really liked the way it turned out with the Tepary beans.

Delicious!

I used the tepary beans in a Three Sisters Bowl with acorn squash, and your hominy as well. Absolutely perfect for Thanksgiving.
