When cooked, these thin-skinned beans stay whole and offer rich, tasty bean broth. The bean is dense without being starchy, almost fudge-like. Once cooked it is part of the "kidney" family. Use in salads, on their own, baked, or in soup.

The Rancho Gordo-Xoxoc Project: These beans are the results of two companies working together to help small farmers continue to grow their indigenous beans in Mexico.
