Our vision of the Greater Southwest has always been of a place where farms and gardens, kitchens and tables, and stores and restaurants are brimming with the diversity of aridlands-adapted heirloom crops. We are using our knowledge and resources to find, test and select the best varieties of lettuce, carrots, broccoli, and other popular garden crops for use in arid environments.

    22. Thymus vulgaris. Thyme is one of the most popular culinary herbs. Aromatic leaves and small, pink flower spikes on a short, creeping plant. Thyme has a long history of medicinal use: thyme oil is antiseptic, thyme tea is mineral-rich, anti-spasmodic.     23. Beta vulgaris. Beautiful golden beets mature in 55-60 days from planting. Developed by W. Atlee Burpee Seeds in the 1940's. Produces an orange-skinned, golden yellow-fleshed root with pleasant, sweet flavor that is milder than red beets. Best eaten when roots are 2" in diameter.
