Seeds > Beans - Jack
Jack beans are not from the Phaseolus genus like most other beans in our collection, but a cousin from the Fabaceae family: Canavalia ensiformis. They are ancient plants originating in Central and South America and have been found in Southwestern Hohokam archaeological sites dating back to 700 CE. Some toxicity in the mature beans requires care in cooking.
