"Ancho" means wide - this chile can be 3" across at the shoulders. Called poblano in the fresh stage, this is a mild chile used in sauces, particularly moles. This dark rich mahogany chile has a mild, fruity flavor with notes of plum, raisin, tobacco and a slight woodiness.
